Two of our family’s favorite recipes from Gram that are perfect for Easter or any springtime event: Spring Green Pistachio Cake and Easy Cheesy Breakfast Quiche. Enjoy!
Spring Green Pistachio Cake
1 pkg white or yellow cake mix
1 pkg instant pistachio pudding
1 cup 7-up
1/2 vegetable oil
1/2 cup finely chopped walnuts (optional)
2 envelopes Dream Whip
1 box instant pistachio pudding
1 1/2 cup milk
Grease and flour bundt pan, preheat oven to 350 degrees. In bowl, mix cake mix, pudding mix, eggs, 7-up and oil for 2 mins. Fold in walnuts and pour into bundt pan. Bake 50-60 mins or until toothpick inserted comes out clean. Let cool in pan for 10 mins and invert onto wire rack and let cool completely.
Frosting – beat milk, pistachio pudding mix, and dream whip in a deep bowl until peaks form. Frost cooled cake.
Cake must be kept refrigerated!
Easy Cheesy Breakfast Quiche
1 – 1 1/2 pounds crispy cooked bacon – slightly crumbled (ham or breakfast sausage can be substituted)
1 1/2 cups shredded Velveeta or American cheese
1/3 cup diced onion
1 whole green pepper – diced
3/4 cup Bisquick baking mix
1 1/2cups milk
salt, pepper to taste
Grease bottom and sides of glass pie plate or quiche dish. spread cooked bacon evenly on bottom of dish, sprinkle onions, peppers and grated cheese evenly on top of bacon layer. Salt and pepper. In separate bowl, mix milk, Bisquick mix, and eggs well. Pour this mixture evenly in pie plate .
Bake at 350 degrees until top is a light brown color and middle is firm (approx 35-40 mins). remove from oven and let cool for 10 mins before serving.
